Miso Short Ribs


INGREDIENTS

4 short ribs
Red miso 4 tbsp
Soy sauce 1/2 cup
Mirin 1/2 cup aka rice wine (or substitute with rice vinegar - in this case use 1/4 cup)


METHOD

Salt the ribs for 2 hours and let them rest - than wash them off

In a zip lock bag combine the miso, soy sauce and mirin - mix it well - place the ribs in the bag and make sure the marinade covers the ribs - let them marinade overnight or at least 2 hours

WHEN READY TO BAKE

Place the ribs (without the marinade) in a ceramic dish with lid or if using pan cover with foil

Add water on the bottom - about 1/2 an inch

Cover and bake for 2.5 hours on 375 degrees

When ready the ribs should be falling apart

For sauce use Terrapin Ridge Farms Jalapeño Aioli mixed with Maille Old Style Mustard and serve over baked broccolini
