Fettuccine with Lemon and Peas
INGREDIENTS
1 lb Fettuccine - preferably fresh
3 cups Fresh green peas or 1 (16-ounce) package frozen petite peas (not thawed)
1 Lemon - for zest
1 1/4 cups Heavy cream
3 tbsp Unsalted butter
METHOD
Bring a large pot of water to boil and in the meantime prepare the sauce
In a large saucepan melt the butter over medium - high heat
Add the peas - and stir to coat
Add lemon zest
Add the cream and bring to a gentle simmer, cook stirring occasional until slightly thickened - 5 to 7 minutes
Season with salt and pepper
In the time you cook the sauce - cook the pasta in the boiling water
Make sure to adds some salt to the boiling water
Serve immediately
