Artichokes with Lemony Dipping Sauce

Serves Two


INGREDIENTS

2 Large artichokes

DIPPING SAUCE:
3 tbs Mayonnaise or greek yogurt
1 tbsp Lemon juice
1 tbsp Dijon mustard
1/8 of a tsp Sugar
1/8 tsp Garlic powder
Pinch of salt


METHOD

Cut about an inch off the top of each artichoke, cut off the stem - place in a pot - stem side up and steam or boil for 45 minutes to 1 hour

In the mean time mix the dipping sauce from the remaining ingredients

Let the artichokes cool off and scoop the inside “hairy” part to reveal the heart

Serve alongside the dipping sauce
