Super Greens Soup

Low glycemic and cleansing


VEGETABLES

1 Yellow onion diced
3 Garlic cloves - diced
1 Celery root - cubed
2 cups Broccoli florets
3 cups Spinach - fresh or frozen

LIQUIDS

1 cup non dairy milk
5 cups low sodium vegetable broth

SPICES

2 tbsp Olive oil
Salt- to taste
Black pepper - to taste
1 tsp Cumin powder
1 tsp Paprica
3 tbsp Basil
3 tbsp Nutritional yeast (this can be omitted )
2 tbsp Soy sauce

FOR SERVING

1 cup cooked quinoa


METHOD

Sauté onion and garlic in the oil

Add broth and milk all spices and celery root and cook for 20 minutes until soft

Add broccoli and cook for 5 more minutes

Add the spinach and cook for 5 more minutes

Blend the soup - leave it a little chunky

Add half of the quinoa - and blend it lightly

Add the rest

Serve warm!
