White Gazpacho


INGREDIENTS

1 cup Cashews - soaked overnight or boiled for 15 minutes
1lb White seedless grapes
1 Garlic clove
1 English cucumber (the skinny long type or 4 Persian)
2 tbs. Olive oil
Salt - to taste

Prep time 10 minutes


METHOD

Blend everything until smooth

Serve chilled topped with a few chopped white grapes
